Heirloom Tomatoes with Fresh Finis Herbs
and White Wine Vinaigrette by Ralph Vincent


  • 1.5 - 2 lbs of heirloom Tomatoes cut into 1/4 inch slices.
  • 2 tablespoons minced red onion.
  • Kosher salt and black pepper to taste.
  • Fresh Finis Herbs.
  • 1 teaspoon each of:
    minced fresh basil
    flat leaf parsley
    and mint
    stirred together in a small bowl.
  • White Wine Vinaigrette
  • 1/4 cup extra virgin olive oil
  • 1.5 tablespoons of white wine vinegar
  • 1/4 teaspoon of koshrer salt
  • 1/8 teaspoon ground black pepper


Arrange the tomato slices on a serving plate, sprinkle with salt and pepper to taste. Whisk the vinaigrette ingredients together and drizzle over the tomatoes. Sprinkle the finis herbs and red onion over the tomatoes. Refrigerate until serving time. Remove from the refrigerator 20 minutes before serving.
